Looking Good this Christmas


Cornish Yarg is still made by hand in open vats (as it always has been) by Lynher Dairies in West Cornwall. The milk comes from the home farm and ten of our near dairy farming neighbours.The cheese is brined overnight before either wild garlic leaves or big juicy nettle leaves are carefully wrapped around each one.
Both kinds of leaves help the Yarg mature and develop its characteristic creamy, yet slightly crumbly texture, whilst adding a subtle, delicate flavour to the cheese.
A striking addition to a Christmas cheeseboard, Wild Garlic or the classic nettle-wrapped Yarg are tasting great. 
 

Tasting notes


Throughout the year and as the milk changes Yarg will be a little softer or firmer, a bit more crumbly or slightly more creamy. Right now we have a great balance between the crumble of the core and the creaminess of the maturing cheese under the rind.

It is tasting bright and fresh and the Wild Garlic year has a particularly good garlicyness about it.
