Surprisingly different to the nettle covered Yarg, it has a closer texture and is fresh and bright with the distinctive taste of the wild garlic leaf. Like the Nettle Yarg, Wild Garlic Yarg is made by hand in open vats on our farm in West Cornwall. The cheese has a distinctive flavour and appearance – genuinely quite different to anything else on the counter.
The new crop of wild garlic has just appeared in our woods and we are using the leaves already. They are a delightful bright green and have lent a delicious faint aroma of fresh new garlic leaves to the Dairy.
